Gubbröra with Toonish

Ingredients
- 1 small red onion
- 1 small yellow onion
- 1 pot of chives
- 1 pot of dill
- 200g firm tofu
- 1 boiled potato
- 1.5 dl plant-based mayonnaise
- 1 dl plant-based creme fraiche
- 150g defrosted Toonish
- 4-8 slices of white bread
- Salt and black pepper
What is Gubbröra?
Translated directly from Swedish it means “old man’s mix” and it is served on holidays like Midsommar, Easter and Christmas found in Swedish buffets or as an appetiser. It usually includes anchovies or pickled herring — but this time we’ve used Toonish!
Preparation
1.
Defrost the Toonish ahead of time.
2.
Peel and finely chop the onion, chives and dill.
3.
Slice the tofu from one end using an egg slicer. Turn the tofu around and slice from the other side. Slice the boiled potato into fine dics.
4.
Mix the mayonnaise and creme fraiche into a bowl. Carefully add Toonish to the mix with the rest of the ingredients. Add some salt and black pepper to taste.
5.
Serve on butter-fried toast or hard bread.
