Start by heating the oven to 200°C. Wash the potatoes and cut a cross over the potatoes. Put them in the oven and bake until they get soft, 45-60 minutes depending on size. 2. Mix all ingredients for the tomato mix in a bowl.
When the potatoes are done, put a few tablespoons of the tomato mix onto each potato.
Top it with parsley, sliced red onion and some olive oil. Enjoy!
