Toonish Melt



  • 1 jar Toonish Mayo
  • 1 tbsp dijon mustard
  • 0.5-1 tbsp tabasco (after taste)
  • 1.5 green onions
  • 8 slices of levain bread
  • 4 slices vegan cheddar cheese (we use Violife cheddar slices)


  1. Rinse and shred the green onions thin.
  2. Mix Toonish Mayo with green onions, dijon mustard and tabasco and taste. Flavour should be spicy, sour and rich.
  3. Put the vegan cheese slices on half of the bread slices and put a generous amount of Toonish-mix on the other. Then put them together.
  4. Roast in a toast iron or fry in a pan with a lot of cooking fat under pressure. If using a pan, preferably put a lid on for a couple of seconds so the cheese melts.
  5. Cut the sandwich in halfs and serve.
