Toonish Curry Toast with Avocado

3-4 tbsp Toonish Curry

2 big slices of levain bread, 1cm thick

1/2 avocado
-
1/2 tomato
-
1/5 of spring onion

Vegan mayonnaise for frying

A few salads or radicchio leaves

Spread both sides with mayonnaise. Grill the slices of bread in a pan on both sides until the bread has become golden.

Slice the avocado and tomato. Add it on top of one of the slices. Add 3-4 tablespoons of Toonish Curry, and top with spring onion and a couple of lettuce leaves. Finishing with the final slice of toast. Enjoy!
