A side show of dark toast topped with Toonish Curry, avocado, and pickled onions.


  • 3-4 tbsp Toonish Curry
  • 2 big slices of sourdough bread, 1cm thick
  • 1/2 avocado
  • 1/2 tomato
  • 1/5 of spring onion
  • Vegan mayonnaise for frying
  • A few salads or radicchio leave


  1. Spread both sides with mayonnaise. Grill the slices of bread in a pan on both sides until the bread has become golden.
  2. Slice the avocado and tomato. Add it on top of one of the slices. Add 3-4 tablespoons of Toonish Curry, and top with spring onion and a couple of lettuce leaves. Finishing with the final slice of toast. Enjoy!
