Salmoonish Poké Bowl

Ingredients
- 4 portions black rice
- 400g Defrosted Salmoonish
- 3 spring onions
- 2 avocados
- 50g pea shoots
- 70g edamame beans
- 100g pickled red onion
- 100g mango, diced
- Black sesame seeds
- Sriracha mayo
- Soy sauce
- Cilantro for garnish
Asian cucumber
- 1 cucumber
- 1 tsp fresh ginger, grated
- 2 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp sesame oil
Preparation
1.
Defrost the Salmoonish ahead of time.

Rinse the rice and boil according to instructions on the package.

Prepare the Asian cucumber by shredding it very thin using a mandolin or peeler. Then mix the ginger, rice vinegar, sugar and sesame oil. Pour the mix onto the cucumber and leave for at least 30 minutes.

Chop the spring onions.

When the rice is ready you can start building each bowl. Place 1 portion rice in a bowl. Top it with edamame beans, 1/2 of an avocado, mango, pickled red onion, pea shoots and spring onions as shown in the picture. Then finally add the Asian cucumber and sprinkle the sriracha mayo nicely over the whole bowl. Finish by garnishing with cilantro and black sesame seeds. Serve and enjoy!
